Eggplant Ricotta Bites

Note: These are awesome... take my word for it :)

Ingredients:
- 1/2 eggplant
- 1/2 cup fat free ricotta
- 1/4 cup fat free cheese
- hot sauce and basil

Directions:
Cut eggplant into slices. top with ricotta, cheese, hot sauce. Bake in oven at 400 for about 20-30 minutes, depending on thickness of slices.
