Coconut Shrimp/Chicken

Ingredients:
-1 tablespoon coconut oil
- 3 oz shrimp/chicken
- 2 tbspn unsweetened coconut flakes (you can also sub flaxseed meal for the coconut flakes)
Directions:
-In a non-stick pan, heat coconut oil. add shrimp and coconut flakes. Heat until thoroughly cooked. The coconut flakes soak up all the oil.


Sauce:
- 3/4 cup sugar free apricot jelly
- 1/4 cup Dijon mustard
- 1 T lime juice
