Pumpkin Pancakes

1/2 C oats
1/3 C canned pumpkin
5 egg whites
1 T ground flax (optional)
1/2 T cinnamon
Splenda to taste

Heat a frying pan until hot, then reduce to medium temperature. After mixing together all the ingredients drop by spoonful onto the plan, flipping when bubbles start to form. Makes about 5 - 4" pancakes.
